- Toast the whole-grain bread if you prefer it crispy.
- Spread 3 tablespoons of hummus on each slice of bread.
- Spread the mashed avocado on top of the hummus on one slice.
- Add the mixed salad greens over the avocado.
- Layer the sliced red bell pepper, cucumber, and shredded carrot on top of the greens.
- Place the second slice of bread on top and press gently to hold the sandwich together.
- Slice and serve immediately.
