Ingredients
  

  • 1 large whole-grain or low-carb tortilla high-fiber preferred
  • 2 tbsp hummus any flavor, unsweetened
  • 3–4 oz turkey breast or chicken breast sliced, low-sodium if possible
  • ½ cup spinach or mixed greens loosely packed
  • ¼ cup cucumber slices thinly sliced
  • ¼ cup bell pepper strips any color
  • 2 tbsp shredded carrots optional
  • 1 slice tomato pat dry to reduce moisture
  • salt & pepper optional, to taste

  • 1 Cutting board optional
  • 1 Sharp knife optional
  • 1 Microwave or skillet to warm the tortilla

Method
 

  1. Warm the tortilla for 5–10 seconds in the microwave or a dry skillet until flexible.
  2. Spread the hummus evenly over the tortilla, leaving a small border around the edges.
  3. Place the turkey or chicken slices in a horizontal line across the center of the tortilla.
  4. Add the spinach, cucumber, bell pepper strips, and any optional veggies on top of the protein.
  5. Fold the sides in slightly, then roll the tortilla tightly from the bottom up to form a wrap.
  6. Slice in half if serving immediately, or keep whole if packing for later.

Notes

  • For better blood-sugar control, choose a high-fiber or low-carb tortilla. This makes the biggest difference in how the wrap digests.
  • Pat tomatoes dry and keep wetter ingredients away from the edges to prevent sogginess, especially if meal-prepping.
  • Turkey, chicken, tofu, or hard-boiled eggs all work well - aim for 3–4 oz protein to keep the wrap filling and balanced.
  • Warm the tortilla briefly before rolling; it becomes more flexible and much easier to wrap tightly.
  • Add extra veggies like spinach, peppers, or cabbage to increase fiber without adding many carbs.
  • For a vegetarian version, swap the meat for tofu or add extra hummus for creaminess and steady energy.
