Ingredients
  

  • 1 tbsp olive oil extra virgin
  • 1 lb chicken breasts boneless, skinless
  • 3 cloves garlic minced
  • 1 lemon juiced, zest optional
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper freshly ground
  • 1 tbsp fresh herbs parsley or thyme, optional

Equipment

  • 1 Large skillet or cast iron pan Heavy pan works best
  • 1 Cutting board For chicken and lemon
  • 1 Knife Sharp makes life easier
  • 1 Tongs or Spatula For flipping chicken
  • 1 Citrus juicer (optional) Helpful but not required

Method
 

  1. Pat the chicken dry and season both sides with salt and black pepper. Set it aside for a minute.
  2. Heat the olive oil in a large skillet over medium to medium high heat until it looks loose and hot.
  3. Add the chicken to the skillet in a single layer. Do not crowd the pan. Cook for a few minutes without moving it until the bottom is golden.
  4. Flip the chicken and cook the other side until cooked through and lightly browned
  5. Reduce the heat slightly and add the garlic to the pan. Stir it around for about 30 seconds, just until it smells good.
  6. Squeeze the lemon juice into the skillet. Let it bubble and loosen the browned bits on the bottom.
  7. Spoon the pan juices over the chicken and remove from heat.
  8. Let the chicken rest for a minute or two, then serve.
