Turkey Meatballs in Tomato Sauce

Juicy, cozy turkey meatballs slow-cooked in a garlicky tomato sauce. No breadcrumbs, just real comfort food that fits any low-carb day.

Ingredients
  

  • 1 pound Ground Turkey Not too lean a little fat keeps them juicy
  • 1 large Egg Helps bind everything together
  • 2 cloves Garlic Minced or chopped, your call
  • ¼ cup Grated Parmesan Adds flavor and helps with texture
  • 2 tablespoons Almond Flour Optional, but helps hold shape
  • 1 teaspoon Dried Oregano Or Italian seasoning
  • ½ teaspoon Salt Adjust to taste
  • ¼ teaspoon Black Pepper Freshly ground if you can
  • 2 cups Tomato Sauce Low-sugar or homemade
  • 1 tablespoon Olive Oil For browning (optional)
  • Fresh Basil or Parsley Optional, for garnish

Equipment

  • 1 Crockpot or Slow Cooker 4–6 quart size works best
  • 1 Mixing Bowl For combining the meatball mixture
  • 1 Skillet (optional) For browning meatballs before slow cooking
  • 1 Wooden Spoon To stir the sauce and serve
  • 1 Measuring spoons Optional, if you like being precise
  • 1 Cutting Board & Knife For chopping garlic and herbs

Method
 

  1. Mix It Up: In a big bowl, toss in your ground turkey, egg, garlic, parmesan, almond flour (if using), oregano, salt, and pepper. Use your hands it’s messy, but it works best. Don’t overmix or they’ll get tough.
  2. Shape the Meatballs: Roll the mixture into small balls, about the size of a golf ball. You’ll get around 12–14 meatballs.
  3. Optional Browning: Heat a little olive oil in a skillet and brown the meatballs for a minute or two on each side. Totally optional, but it adds flavor.
  4. Slow Cooker Magic: Pour a bit of the tomato sauce into the bottom of your crockpot. Add the meatballs, then pour the rest of the sauce over them.
  5. Cook Low and Slow: Cover and cook on Low for 5 hours or High for 3 hours. Don’t lift the lid too much let the steam do its thing.
  6. Rest and Serve: When it’s done, let the meatballs sit for about 10 minutes so the sauce thickens. Serve with fresh basil or parsley if you want to be fancy.
  7. Enjoy Later Too: These reheat perfectly the next day, and the sauce somehow tastes even better.

Notes

  • If you want these a little crispier, you can brown the meatballs first before tossing them in the crockpot. I’ve done both ways both work, just depends on how much effort you feel like giving that day.
  • You can use any tomato sauce, but go for one that’s low in sugar if you’re watching carbs. Or make your own if you’ve got time honestly, it’s worth it.
  • If the sauce feels too thick at the end, stir in a splash of broth or even a bit of water. Too thin? Let it cook uncovered for 10 minutes. Easy fix either way.
  • These freeze really well too. I usually portion them out in small containers so future me has dinner ready when life gets hectic.
  • And yeah, they taste even better the next day. Something about the sauce soaking into the meat just hits different.
