Notes
• For best texture: Let the roasted sweet potatoes cool completely before storing. Warm potatoes create steam and turn mushy in the fridge.
• Spinach tip: Make sure the greens are fully dry before adding to containers — moisture is what makes them wilt quickly.
• Make-ahead: Store the potatoes, beans, greens, and dressing separately. Combine just before eating for the freshest flavor.
• Lower-carb variation: Replace half (or all) of the sweet potatoes with roasted cauliflower or zucchini.
• More protein: Add grilled chicken, tofu, or an extra scoop of beans to make it more filling.
• More crunch: Pumpkin seeds, walnuts, or almonds keep the texture balanced and support longer fullness.
• Flavor boosters: Try smoked paprika, chili flakes, cumin, or fresh herbs to change the personality of the salad without altering nutrition.
• Serving size: This recipe makes about 3 lunch portions, depending on appetite and add-ins.
