Ingredients
  

  • 1.5 pounds beef chuck roast cut into chunks
  • 1 tablespoon olive oil extra virgin
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon tomato paste
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1/2 cup low-sodium beef broth
  • 4 cups cauliflower rice fresh or frozen
  • 1 tablespoon lime juice fresh squeezed
  • 2 tablespoons chopped fresh cilantro
  • 1/4 cup crumbled feta optional
  • 1/2 avocado sliced

Method
 

  1. Instruction Group 1: Cook the Beef
  2. (Optional) Heat olive oil in a skillet over medium-high heat. Sear beef chunks on all sides until lightly browned.
  3. Add onion, garlic, tomato paste, cumin, paprika, oregano, black pepper, and salt to the slow cooker. Stir to combine.
  4. Pour in beef broth. Add seared beef chunks (or raw, if skipping browning). Stir gently to coat.
  5. Cover and cook on LOW for 7–8 hours or HIGH for 4 hours, until beef is fork-tender.
  6. Instruction Group 2: Add the Cauliflower Rice
  7. About 30 minutes before the beef is done, stir in the cauliflower rice.
  8. Re-cover and cook for 25 to 30 minutes, just until the cauliflower softens and absorbs flavor.
  9. Instruction Group 3: Finish and Serve
  10. Taste and adjust seasoning with more salt, lime juice, or herbs if needed.
  11. Spoon into bowls. Add desired toppings like avocado, cilantro, crumbled feta, or yogurt.
  12. Serve warm, or portion into containers for meal prep.

Notes
