- Instruction Group 1: Cook the Beef
- (Optional) Heat olive oil in a skillet over medium-high heat. Sear beef chunks on all sides until lightly browned.
- Add onion, garlic, tomato paste, cumin, paprika, oregano, black pepper, and salt to the slow cooker. Stir to combine.
- Pour in beef broth. Add seared beef chunks (or raw, if skipping browning). Stir gently to coat.
- Cover and cook on LOW for 7–8 hours or HIGH for 4 hours, until beef is fork-tender.
- Instruction Group 2: Add the Cauliflower Rice
- About 30 minutes before the beef is done, stir in the cauliflower rice.
- Re-cover and cook for 25 to 30 minutes, just until the cauliflower softens and absorbs flavor.
- Instruction Group 3: Finish and Serve
- Taste and adjust seasoning with more salt, lime juice, or herbs if needed.
- Spoon into bowls. Add desired toppings like avocado, cilantro, crumbled feta, or yogurt.
- Serve warm, or portion into containers for meal prep.
