Salmon-Stuffed Avocado (Diabetes-Friendly Lunch)

Ingredients
  

  • 1 ripe avocado halved, pit removed
  • 6 oz canned salmon drained
  • 2 green onions minced
  • 1 tbsp fresh dill chopped
  • 1 tbsp fresh parsley chopped
  • 1/4 cup mayonnaise homemade preferred
  • 1 tbsp lemon juice freshly squeezed
  • sea salt to taste
  • black pepper to taste

Equipment

  • 1 Bowl For mixing the salmon filling.
  • 1 Fork For mashing the avocado and mixing everything.
  • 1 Spoon For scooping the avocado and filling the halves.
  • 1 Knife To cut the avocado and mince the green onion/herbs.
  • 1 Cutting board Optional, just for prep.

Method
 

  1. Cut the avocado in half, remove the pit, and scoop out a small amount to create space for the filling.
  2. Mash the scooped avocado with a fork and set it aside.
  3. In a bowl, combine the canned salmon, green onions, dill, parsley, mayonnaise, and lemon juice.
  4. Season the mixture with sea salt and black pepper to taste.
  5. Fold the mashed avocado into the salmon mixture.
  6. Spoon the filling evenly into the avocado halves and serve immediately.

Notes

  • For the best texture, use an avocado that’s ripe but still firm enough to hold its shape.
  • Drain the salmon well to avoid a watery filling.
  • If preparing ahead, mix the salmon filling in advance but cut the avocado just before serving to prevent browning.
  • Lemon juice not only adds flavor but also helps slow oxidation on the avocado.
  • You can add crunch with diced cucumber or celery without changing nutrition significantly.
  • For a lighter version, replace mayonnaise with Greek yogurt.
