Ingredients
  

Main Ingredients
  • 1 lb ground turkey
  • 1 tbsp avocado oil or olive oil
  • 1 cup bell peppers sliced
  • 1 cup zucchini sliced
  • 1 cup broccoli florets
  • 1 cup green beans trimmed
  • 1 cup mushrooms sliced
  • 1 cup snap peas
Sauce Ingredients
  • 3 tbsp soy sauce or coconut aminos low sodium, no sugar
  • 2 tsp garlic minced
  • 1 tsp fresh ginger grated
  • 1 tbsp rice vinegar or apple cider vinegar
  • 0.5 tsp black pepper
  • 0.5 tsp red pepper flakes optional

Equipment

  • 1 Large skillet or wok Any wide pan works
  • 1 Spatula or wooden spoon Heat safe
  • 1 Cutting board
  • 1 Knife

Method
 

  1. Heat a large skillet over medium high heat and add the oil.
  2. Add the ground turkey and break it up as it cooks until no longer pink.
  3. Add the vegetables, starting with firmer ones, and cook until just tender.
  4. Stir in the soy sauce or coconut aminos, garlic, ginger, and vinegar.
  5. Let everything cook together for a few minutes until coated and heated through.
  6. Season with black pepper and red pepper flakes if using, then remove from heat.

Notes

  • Use any mix of non starchy vegetables you have on hand.
  • Lean ground turkey cooks fastest and keeps things lighter.
  • Keep the heat up so the vegetables do not get soggy.
  • Add sauce at the end, not the beginning.
  • Leftovers keep well for a couple of days in the fridge.
