- Heat a large skillet over medium high heat and add the oil.
- Add the ground turkey and break it up as it cooks until no longer pink.
- Add the vegetables, starting with firmer ones, and cook until just tender.
- Stir in the soy sauce or coconut aminos, garlic, ginger, and vinegar.
- Let everything cook together for a few minutes until coated and heated through.
- Season with black pepper and red pepper flakes if using, then remove from heat.

- Use any mix of non starchy vegetables you have on hand.
- Lean ground turkey cooks fastest and keeps things lighter.
- Keep the heat up so the vegetables do not get soggy.
- Add sauce at the end, not the beginning.
- Leftovers keep well for a couple of days in the fridge.
