Peanut-Chicken Cabbage Wraps

Ingredients
  

  • 2 cups Cooked chicken Shredded or chopped
  • 8–10 Cabbage leaves Large outer leaves
  • 3 tbsp Natural peanut butter No added sugar
  • 1 tbsp Soy sauce or tamari Low sodium if preferred
  • 1 tsp Fresh ginger Grated
  • 1 clove Garlic Minced
  • 1 tbsp Lime juice Fresh squeezed
  • 1 tsp Sesame oil Optional but recommended
  • 1–2 tbsp Warm water To thin sauce
  • ¼ cup Shredded carrots Optional
  • 2 tbsp Green onions Chopped, optional
  • 2 tbsp Crushed peanuts Optional topping

Equipment

  • 1 Large Skillet For cooking chicken
  • 1 Mixing Bowl For peanut sauce
  • 1 Cutting board For prepping ingredients
  • 1 Sharp knife For slicing and trimming
  • 1 Measuring spoons For sauce ingredients
  • 1 Tongs or spoon For mixing and assembling

Method
 

  1. If your chicken is not cooked, cook it first in a skillet over medium heat with salt and pepper until fully done. Let it rest for a few minutes, then shred or chop into small pieces.
  2. In a bowl, combine peanut butter, soy sauce or tamari, grated ginger, minced garlic, lime juice, and sesame oil. Stir until thick and smooth. Add warm water one tablespoon at a time until the sauce loosens and becomes creamy.
  3. Taste the sauce and adjust if needed. Add a little more lime juice for brightness or soy sauce for saltiness.
  4. Carefully separate the cabbage leaves. Trim the thick bottom stem slightly if it feels too stiff to fold.
  5. Lay a cabbage leaf flat. Add a portion of chicken in the center, drizzle with peanut sauce, and top with optional carrots, green onions, or crushed peanuts.
  6. Fold the sides inward and roll tightly like a wrap. Alternatively, fold in half and eat like a taco.
  7. Serve immediately for best texture.

Notes

  • Use natural peanut butter with no added sugar for better flavor and lower carbs.
  • If cabbage leaves feel too stiff, dip them in hot water for 30 to 60 seconds to soften.
  • Do not overfill the wraps or they may tear while rolling.
  • The peanut sauce thickens in the fridge. Stir and add a small splash of warm water before serving.
  • Best served fresh. Store components separately if making ahead.
  • For extra crunch, add shredded red cabbage or sliced bell peppers.
  • For more heat, add chili flakes or a dash of sriracha to the sauce.
