Ingredients
  

  • 1.5 cups mixed salad greens loosely packed
  • 0.5 cup cooked lentils cooled; green or brown
  • 1 whole apple cored & sliced; divided
  • 1.5 tbsp feta cheese crumbled
  • 1 tbsp red-wine vinegar or apple cider vinegar
  • 2 tsp olive oil extra virgin

Method
 

  1. 1. Prepare the greens:Add the mixed salad greens to a serving bowl and fluff gently.
  2. 2. Add the lentils:Spoon the cooled cooked lentils over the greens.
  3. 3. Slice the apple:Core and slice the apple, adding half the slices to the bowl. Reserve the rest for topping.
  4. 4. Add the feta:Sprinkle the crumbled feta evenly over the salad.
  5. 5. Dress the salad:Drizzle the red-wine vinegar and olive oil over the bowl.
  6. 6. Toss and adjust:Toss gently to combine. Taste and adjust seasoning, adding more vinegar or feta if desired.
  7. 7. Finish and serve:Top with the remaining apple slices and serve immediately.

Notes

Cooked Lentils:
Use fully cooled lentils so they don’t wilt the greens. Green or brown lentils hold their shape best.
Apple Tips:
Slice the apple just before serving for maximum crispness. If prepping ahead, toss slices with a little vinegar or lemon juice to prevent browning.
Greens:
Any mixed greens work, but sturdier greens like baby kale or romaine hold up better if the salad sits longer.
Dressing Adjustments:
Red-wine vinegar adds brightness without overpowering the apples. Add a pinch of salt or a small splash of additional vinegar if the salad tastes flat.
Make It Vegan:
Swap the feta for toasted nuts or seeds for added crunch and healthy fats.
