Ingredients
  

  • 2 pounds lamb shoulder cut into cubes
  • 2 tablespoons olive oil extra virgin preferred
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 medium carrots sliced
  • 1 cup chopped tomatoes fresh or canned
  • 2 tablespoons tomato paste adds richness
  • 1 teaspoon dried oregano
  • 1 teaspoon thyme dried or fresh
  • 1/2 teaspoon cumin optional, adds warmth

  • 3 cups low-sodium broth beef or vegetable
  • 1/2 lemon juice only
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

  1. Prepare the ingredients. Cut the lamb into small cubes, chop the onion and carrots, and mince the garlic. Keep everything close it makes cooking smoother.
  2. Warm the olive oil. Set a large skillet over medium heat. When the oil starts to shimmer, add the lamb and brown it on all sides. This builds flavor that carries through the whole stew.
  3. Layer the crockpot. Add the carrots and other root vegetables first, then the onions and garlic. Place the browned lamb on top. Sprinkle in the herbs, salt, and pepper.
  4. Add tomatoes and broth. Spoon in the tomato paste, pour in the chopped tomatoes, and finish with the broth until the ingredients are almost covered.
  5. Let it cook slow. Cover the crockpot and cook on low for about 6 to 8 hours, or on high for 4 to 5 hours. You will know it’s done when the lamb falls apart easily.
  6. Finish with lemon and parsley. Stir in lemon juice once cooking is done. Taste and adjust seasoning if needed. Sprinkle fresh parsley before serving.
  7. Serve and enjoy. Let it rest for 10 minutes before serving. The stew thickens slightly and the flavors come together beautifully.

Notes

  • Choosing lamb: Shoulder or leg works best because both get tender during long cooking. Trim extra fat but keep a little for flavor.
  • If you are short on time: Skip browning the lamb and go straight to layering in the crockpot. Add one extra spoon of tomato paste to keep the flavor rich.
  • Storage: This stew tastes even better the next day. Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months. Reheat slowly on the stove so the lamb stays soft.
  • Vegetable swaps: Zucchini, bell peppers, or even spinach can replace potatoes or carrots for a lighter, lower-carb meal.
  • For more depth: A splash of red wine vinegar or a small piece of cinnamon stick adds a gentle warmth without overpowering the stew.
  • Serving idea: Try it with cauliflower mash or a simple Greek salad to keep things fresh and balanced.
