Low-Carb Thai Coconut Chicken Curry

Ingredients
  

  • 2 medium Chicken breasts or thighs Thighs stay more tender
  • 1 can (13.5 oz) Full-fat coconut milk Shake well before using
  • 2 tbsp Red curry paste Adjust for spice preference
  • 2 cloves Garlic Roughly chopped
  • 1 tbsp Coconut oil or olive oil For searing
  • 1 tbsp Soy sauce or coconut aminos Adds salt and depth
  • ½ Lime Juiced, added at the end
  • ½ cup Chicken broth Or water if preferred
  • Salt To taste
  • Fresh basil or cilantro Optional, for garnish
  • Chili flakes Optional, for extra heat
  • Veggies of choice (bell peppers, spinach, zucchini) Optional additions

Equipment

  • 1 Slow Cooker or Crockpot 4–6 quart size works best
  • 1 Large Skillet For searing chicken before slow cooking (optional)
  • 1 Wooden Spoon For stirring the curry paste and sauce
  • 1 Measuring spoons Optional, but handy if you want precision
  • 1 Knife & Cutting Board For prepping chicken and veggies
  • 1 Ladle For serving the curry

Method
 

  1. Heat coconut oil (or olive oil) in a skillet over medium heat. Sear the chicken for 1–2 minutes on each side until lightly golden. This part’s optional, but it adds flavor.
  2. In your slow cooker, add red curry paste, garlic, coconut milk, and chicken broth. Stir it around until everything mixes together.
  3. Add the chicken to the crockpot and make sure it’s mostly covered with the sauce. If not, add a splash more broth.
  4. Cook on LOW for 5–6 hours or HIGH for 3–4 hours. Don’t lift the lid too often - just let it do its thing.
  5. About 15–20 minutes before serving, toss in any veggies you like (bell peppers, spinach, zucchini whatever’s around).
  6. Once the chicken’s tender and the sauce looks thick and creamy, squeeze in the lime juice and taste. Add salt if it needs it, or a little more curry paste if you want more spice.
  7. Serve warm with cauliflower rice, zucchini noodles, or just eat it straight out of a bowl like I do. Garnish with basil or cilantro if you’ve got it.

Notes

  • If your curry sauce turns out a little thin, take the lid off the slow cooker and let it simmer for 10-15 minutes. It’ll thicken up on its own.
  • Full-fat coconut milk makes a huge difference. The light stuff just won’t give that creamy texture.
  • Start small with the curry paste if you’re not sure how spicy it is. You can always add more later.
  • Want to make it even lower carb? Skip the extra veggies or stick to leafy ones like spinach or kale.
  • Leftovers taste even better the next day the flavors deepen overnight. Store in the fridge for up to 3 days.
  • Freezes great, too. Just thaw it slowly and stir in a splash of coconut milk when reheating.
