Ingredients
  

  • 2 tablespoons Olive oil For sautéing the onion and garlic
  • 1 medium Onion Chopped small to build the soup’s base flavor
  • 3 cloves Garlic Minced or crushed, whichever you prefer
  • 2 stalks Celery Sliced thin for a fresh, clean taste
  • 2 medium Carrots Peeled and chopped
  • 1 pound Chicken thighs or breasts Thighs stay juicier; breasts keep it lighter
  • 6 cups Chicken broth Homemade if possible, store-bought works fine
  • 3 cups Kale Chopped, stems removed
  • 1 tablespoon Lemon juice Add at the end to brighten the flavor
  • 1 teaspoon Salt Adjust to taste
  • Black pepper A few twists from the grinder
  • 1 optional Bay leaf or thyme For a deeper, earthy flavor

Equipment

  • 1 Large pot Heavy-bottomed if you have one; it helps the flavors build evenly.
  • 1 Wooden Spoon For stirring the base and scraping the bottom of the pot.
  • 1 Sharp knife To chop the vegetables and chicken cleanly.
  • 1 Cutting board Any sturdy board will do.
  • 1 Measuring spoon For olive oil, lemon juice, and seasoning.
  • 1 Ladle Makes serving easier and keeps the broth clear.

Method
 

  1. Set a large pot over medium heat and pour in olive oil. Wait until it shimmers a little. ( Note ) Don’t rush this part - you want it warm, not smoking.
  2. Add chopped onion and garlic. Stir until soft and you can smell them. ( Note ) About 3–4 minutes. They should look golden, not brown.
  3. Toss in celery and carrots. Stir a few times to coat them in the oil. ( Note ) Let them cook until they start to soften slightly.
  4. Add the chicken pieces. Stir until they lose that pink color on the outside. ( Note ) They’ll finish cooking in the broth.
  5. Pour in the chicken broth. Scrape the bottom of the pot with your spoon to lift any browned bits. ( Note ) That’s where the flavor hides.
  6. Turn the heat down to low. Let it simmer gently for 20–25 minutes. ( Note ) You’ll see small bubbles around the edges - that’s perfect.
  7. Add the chopped kale. Stir once or twice. ( Note ) It’ll wilt down in a few minutes and turn dark green.
  8. Turn off the heat. Add lemon juice, salt, and black pepper. ( Note ) Taste it, then adjust seasoning as needed.
  9. Serve warm. ( Note ) The soup thickens a bit as it cools - that’s normal.

Notes

  • The soup tastes even better the next day. The broth settles, and the flavors deepen overnight.
  • If you use spinach instead of kale, add it at the very end - it cooks fast and can go mushy if left too long.
  • Homemade broth makes a difference, but store-bought is fine. Just taste before adding salt; some brands are already salty.
  • For a creamier texture, mash a few of the cooked carrots or add a small splash of cream right before serving.
  • You can freeze leftovers for up to 2 months. Let it cool first, then store in airtight containers.
  • This recipe is forgiving - if something feels off, taste and adjust. A bit more lemon, a little salt, sometimes that’s all it takes.
  • Pair it with a side of avocado or a boiled egg if you want extra protein without raising carbs.
