Ingredients
  

  • 8 oz whole-wheat pasta rotini, penne, or any sturdy shape
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper any color, diced
  • 1/4 cup red onion finely chopped
  • 1 can (15 oz) chickpeas rinsed + drained
  • 3 tbsp olive oil extra virgin
  • 2 tbsp lemon juice fresh preferred
  • 1 tbsp red wine vinegar optional, for extra brightness
  • 1 tsp Dijon mustard for emulsion
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 1 clove garlic minced or grated
  • 2 tbsp fresh herbs parsley, dill, or basil

Equipment

  • 1 Large pot For cooking whole-wheat pasta

Method
 

  1. Cook the Pasta

    Bring a large pot of salted water to a boil. Add the whole-wheat pasta and cook until just barely al dente (about 1 minute less than package directions).
  2. Rinse and Cool

    Drain the pasta in a colander and rinse under cold water to stop the cooking. Let it sit for a minute so excess water can drain off.
  3. Prep the Veggies

    Chop the tomatoes, cucumbers, bell pepper, and red onion. Keep everything roughly bite-sized so it mixes evenly.
  4. Rinse the Chickpeas

    Drain and rinse the chickpeas well. Pat them dry so they don’t water down the salad.
  5. Make the Dressing

    In a small bowl or jar, whisk (or shake) together olive oil, lemon juice, vinegar, Dijon, garlic, salt, and pepper.
  6. Add Veggies and Chickpeas

    Fold in the chopped vegetables, chickpeas, and any fresh herbs. Mix lightly so everything stays crisp.
  7. Taste and Adjust

    Add more lemon, salt, or herbs if needed. Whole-wheat pasta absorbs flavor as it sits, so don’t be afraid to season generously.
  8. Chill Before Serving

    Refrigerate for at least 20–30 minutes to let the flavors settle. It tastes even better the next day.

Notes

  • Cook the pasta slightly under al dente. Whole-wheat pasta softens as it cools, so pulling it off the heat early keeps the salad firm and not mushy.
  • Rinse the pasta for this recipe. It stops the cooking and removes extra starch so the salad stays light instead of gummy.
