Ingredients
  

For the Grilled Vegetables
  • 1 tbsp olive oil for brushing vegetables
  • 1 small zucchini sliced
  • 1 medium bell pepper sliced
  • 1 small red onion sliced
  • 1 cup mushrooms sliced (optional)
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste
For the Wrap
  • 1 large whole-grain tortilla 8–10 inch
  • 3 –4 tbsp hummus any flavor
  • 1/2 cup spinach or romaine
  • 1 squeeze lemon juice optional
  • 1 tsp olive oil optional drizzle

  • 1 Skillet (optional) For warming or pressing the wrap

Method
 

  1. Slice the zucchini, bell pepper, onion, and mushrooms into even pieces and toss them lightly with olive oil, salt, and black pepper.
  2. Heat a grill pan (or outdoor grill) over medium-high and cook the vegetables for 3–5 minutes per side, until tender with light char.
  3. Warm the whole-grain tortilla in a dry skillet for 10–15 seconds per side to make it flexible and easier to roll.
  4. Spread 3–4 tablespoons of hummus in a strip down the center of the tortilla.
  5. Layer the grilled vegetables over the hummus, letting excess steam escape before adding them.
  6. Add a handful of spinach or romaine on top for freshness and structure.
  7. Fold the sides inward, then roll the wrap tightly from the bottom up.
  8. Optional: Press the wrap in a warm skillet for 30 seconds per side to lightly toast and seal it.

Notes

  • For the best texture, let the grilled vegetables cool for a minute before adding them to the wrap - excess steam can make the tortilla soft.
  • Warming the tortilla briefly in a skillet helps prevent tearing and makes the wrap easier to roll.
  • If using tomatoes, cucumbers, or other high-moisture add-ins, pat them dry first to avoid sogginess.
  • To make this wrap more filling, add a small portion of protein such as grilled chicken, roasted chickpeas, or sliced hard-boiled egg.
  • For meal prep, store the grilled vegetables, greens, and hummus separately. Assemble the wrap just before eating for the best texture.
  • A quick press in a skillet after rolling gives the tortilla a lightly crisp exterior and helps seal the wrap.
