Ingredients

  • 1 tbsp olive oil extra virgin
  • 4 tbsp butter salted or unsalted
  • 1.5 lb chicken thighs or breasts boneless, skinless
  • 12 oz green beans trimmed
  • 4 cloves garlic minced
  • 0.5 tsp salt adjust to taste
  • 0.25 tsp black pepper or more if you want
  • optional red pepper flakes for heat
  • optional lemon juice squeeze at the end

Equipment

  • Large Skillet or Frying Pan Big enough so the chicken is not crowded
  • Tongs or Spatula For flipping the chicken
  • Knife For trimming beans and garlic
  • Cutting board Any basic one works

Method

  1. Heat a large skillet over medium heat. Add the olive oil and half of the butter. Let it melt.
  2. Season the chicken with salt and pepper on both sides. Add it to the pan and leave it alone for a few minutes so it can brown.
  3. Flip the chicken once it releases easily. Add the remaining butter and the garlic. Stir the garlic around briefly so it does not burn.
  4. When the chicken is almost cooked through, push it to one side of the pan. Add the green beans to the empty space and season lightly.
  5. Cook the green beans, stirring occasionally, until they are bright and tender but not soft.
  6. Stir everything together in the pan. Taste and adjust salt or pepper if needed.
  7. Remove from heat. Add red pepper flakes or a squeeze of lemon if using. Let it sit for a minute, then serve.

Notes

  • Chicken thighs stay juicier, but breasts work if that’s what you have. Just watch them so they don’t dry out.
  • Fresh green beans give the best texture. Frozen are fine, but expect more liquid in the pan.
  • Do not rush the browning step. Let the chicken sit until it releases on its own.
  • Garlic burns fast. Add it late and keep it moving.
  • Taste before serving. Butter levels, salt, and pepper are personal. Adjust it to your liking.
