Ingredients
  

  • 2 cups cooked chicken shredded or sliced
  • 1 large cucumber thinly sliced
  • 4 tortillas whole wheat or regular
  • 1/2 cup green goddess dressing homemade or store bought
  • 1 cup lettuce or spinach optional
  • 1 avocado sliced, optional
  • 2 tbsp fresh herbs parsley or chives, optional

Equipment

  • 1 Cutting board For slicing cucumber and chicken
  • 1 Knife For cutting vegetables and chicken
  • 1 Mixing Bowl For preparing the green goddess dressing
  • 1 Spoon For mixing and spreading dressing
  • 1 Skillet (optional) For lightly toasting the wrap

Method
 

  1. Lay the tortillas flat on a clean surface or cutting board.
  2. Spread a spoonful of green goddess dressing across the center of each tortilla.
  3. Add a layer of cooked shredded chicken evenly across the tortilla.
  4. Place thin cucumber slices over the chicken.
  5. Add lettuce or spinach and avocado slices if using.
  6. Drizzle a little extra green goddess dressing on top for flavor.
  7. Fold the bottom of the tortilla over the filling, then fold in the sides.
  8. Roll the tortilla tightly to form the wrap.

Notes

  • Use rotisserie chicken to save time when preparing this wrap.
  • Slice the cucumber thinly so the wrap rolls easily and stays crisp.
  • Do not overfill the tortilla or it may tear when rolling.
  • For a lower carb option, replace the tortilla with large lettuce leaves.
  • The wrap can be lightly toasted in a skillet for a warm, slightly crispy texture.
  • Store the dressing separately if preparing wraps ahead to keep them from becoming soggy.
