Crockpot Shredded Beef Lettuce Wraps

Simple, slow-cooked beef tucked into crisp lettuce leaves. Juicy, rich, and fresh all at once. Perfect for easy dinners, meal prep, or anyone watching carbs or blood sugar.

Ingredients
  

  • 2–3 lbs beef chuck roast trimmed if needed
  • 1 cup beef broth or water
  • 2 tbsp soy sauce or coconut aminos for salt and flavor
  • 1 small onion sliced
  • 3 cloves garlic minced
  • 1 tbsp lime juice fresh if possible
  • 1 tsp chili powder or paprika optional, for flavor
  • salt and pepper to taste
  • 1 head romaine or butter lettuce leaves separated
  • 1 Unit avocado sliced, optional
  • 2 tbsp cilantro chopped, optional
  • lime wedges for squeezing
  • hot sauce or salsa optional

Equipment

  • Slow cooker Or use an Instant Pot if you’re short on time.
  • Cutting board
  • Sharp knife
  • Forks (for shredding the beef)
  • Mixing spoon
  • Serving tongs (optional, but helpful)d

Method
 

  1. Place the beef chuck roast in the crockpot. No need to trim much — just make sure it fits.
  2. Add the broth, soy sauce or coconut aminos, minced garlic, sliced onion, lime juice, chili powder, salt, and pepper.
  3. Stir gently or spoon some liquid over the top so the beef gets coated.
  4. Set the crockpot to low and let it cook for about 8 hours, or on high for 4–5 hours if you’re short on time.
  5. When it’s done, the beef should be soft enough to shred easily. Use two forks and pull it apart right in the pot.
  6. Stir the shredded beef back into the juices. Let it sit on “warm” for 10–15 minutes so it soaks everything up.
  7. Rinse and separate your lettuce leaves while the beef rests.
  8. Spoon some of the shredded beef into each lettuce leaf.
  9. Add any toppings you like avocado, cilantro, lime juice, or a bit of hot sauce.
  10. Fold, bite, and enjoy.

Notes

  • You can use almost any cut of beef that gets tender with slow cooking. Chuck roast works best, but brisket or round will do in a pinch.
  • If the beef feels dry after shredding, just stir in a little more broth or even a spoon of the cooking liquid. It brings everything back to life.
  • Butter lettuce and romaine both hold up well as wraps. Iceberg gives a louder crunch if that’s your thing.
  • These keep great for a couple of days. Store the beef and lettuce separately, so the leaves don’t wilt.
  • The leftovers are awesome on top of rice, cauliflower rice, or even scrambled eggs the next morning.
  • Taste the liquid before you call it done. Sometimes it just needs a squeeze of lime or a tiny bit more salt to wake everything up.
