Ingredients
  

  • 5–6 links Italian sausage (pork or chicken) Choose lean chicken sausage for lower fat.
  • 3 large bell peppers Use a mix of red, yellow, and green for color and flavor.
  • 1–2 medium yellow onions Thinly sliced.
  • 1 can (28 oz) crushed tomatoes No added sugar for diabetic-friendly balance.
  • 3 cloves garlic Minced or pressed.
  • 1 tbsp olive oil Just enough to coat the bottom of the slow cooker.
  • 1 tsp Italian seasoning Adds herby depth.
  • 1 tsp salt Adjust to taste near the end.
  • ½ tsp black pepper Freshly ground.
  • ¼ tsp red pepper flakes Optional, for a gentle kick.
  • 1–2 tsp balsamic vinegar Optional, to balance acidity at the end.
  • handful fresh basil or parsley For garnish before serving.

Method
 

  1. Prepare the vegetables.
    Slice the bell peppers into strips and the onions into thin half-moons. Mince the garlic and set everything aside.
  2. Layer the base.
    Lightly coat the bottom of the slow cooker with olive oil. Add half of the sliced onions and peppers first to build a soft, flavorful base.
  3. Add the sausage.
    Place the sausage links on top of the vegetables. You can brown them in a skillet for a few minutes first if you want deeper flavor, but it’s optional.
  4. Add seasoning and sauce.
    Sprinkle in the garlic, Italian seasoning, salt, pepper, and red pepper flakes. Pour in the crushed tomatoes, then add the rest of the peppers and onions on top.
  5. Cook low and slow.
    Cover and cook on Low for 6 to 7 hours or High for 3 to 4 hours. Stir once or twice during cooking so everything mixes evenly.
  6. Taste and adjust.
    When it’s done, taste the sauce. If it feels a bit sharp, add a teaspoon or two of balsamic vinegar to balance the flavor.
  7. Finish and serve.
    Sprinkle with fresh basil or parsley. Serve warm on its own, over brown rice, or with roasted vegetables for a balanced, diabetic-friendly meal.

Notes

  • For a lighter version, use chicken or turkey sausage instead of pork. The flavor stays rich while cutting back on fat and calories.
  • Choose no-sugar-added crushed tomatoes or marinara to keep the recipe friendly for blood sugar balance.
  • If the sauce tastes a little acidic at the end, a teaspoon of balsamic vinegar or a tiny pinch of sugar evens it out.
  • This meal reheats beautifully. Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
  • Serve it over cauliflower rice, zucchini noodles, or brown rice for a satisfying, balanced plate.
  • Add a handful of spinach near the end of cooking if you want extra fiber and color.
