Method
- Prep the ingredients. Chop the onion, garlic, carrots, and potato. Cut the fish into chunks and set aside.
- Start with the base. Drizzle olive oil into the crockpot. Add onion, garlic, carrots, and any other sturdy vegetables. Sprinkle a little salt, pepper, and paprika if using.
- Add the liquids. Pour in diced tomatoes (with their juice) and the broth. Stir everything together so the flavors mix evenly.
- Let it cook. Cover and cook on Low for 3 to 4 hours, or until the vegetables are tender.
- Add the fish. Gently place the fish pieces on top of the stew. Do not stir. Cover and cook for another 20–30 minutes, or until the fish flakes easily with a fork.
- Add final touches. Turn off the heat. Add lemon juice and spinach if using. Stir gently and taste the broth adjust seasoning as needed.
- Serve and enjoy. Ladle into bowls and serve warm with crusty bread or over rice.
Notes
- Fish options: Cod, tilapia, haddock, or pollock all work beautifully. Choose low-mercury fish if you’re cooking often.
- Veggie swaps: Don’t stress if you’re missing something. Zucchini, green beans, or cauliflower work great too.
- Lower-carb tip: Skip the potato or swap it with turnip or cauliflower to keep carbs even lower.
- Storage: Keeps well in the fridge for up to 2 days. Reheat gently on the stove or in the microwave. Avoid boiling so the fish stays tender.
- Freezer tip: You can freeze it without the fish added, then thaw and add fresh fish later for the best texture.
- Flavor boost: Add a splash of lemon juice or a pinch of smoked paprika right before serving for a fresh lift.
- Diabetic-friendly note: This stew balances lean protein and slow-cooked vegetables for a steady, low-glycemic meal that supports blood sugar control.
