Crockpot Fish Stew with Vegetables

Ingredients
  

  • 1 tbsp olive oil extra virgin
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 3 medium carrots chopped
  • 1 medium potato peeled and diced (optional)
  • 1 can (14.5 oz) diced tomatoes with juice
  • 2 cups low-sodium broth vegetable or chicken
  • 1 tsp smoked paprika optional
  • ½ tsp dried thyme or oregano
  • ¼ tsp black pepper to taste
  • ½ tsp salt or to taste
  • 1 lb white fish fillets cod, tilapia, or haddock, cut into chunks
  • 1 small bell pepper chopped
  • 1 tbsp lemon juice fresh-squeezed
  • 1 handful baby spinach optional, stirred in at the end

Method
 

  1. Prep the ingredients. Chop the onion, garlic, carrots, and potato. Cut the fish into chunks and set aside.
  2. Start with the base. Drizzle olive oil into the crockpot. Add onion, garlic, carrots, and any other sturdy vegetables. Sprinkle a little salt, pepper, and paprika if using.
  3. Add the liquids. Pour in diced tomatoes (with their juice) and the broth. Stir everything together so the flavors mix evenly.
  4. Let it cook. Cover and cook on Low for 3 to 4 hours, or until the vegetables are tender.
  5. Add the fish. Gently place the fish pieces on top of the stew. Do not stir. Cover and cook for another 20–30 minutes, or until the fish flakes easily with a fork.
  6. Add final touches. Turn off the heat. Add lemon juice and spinach if using. Stir gently and taste the broth adjust seasoning as needed.
  7. Serve and enjoy. Ladle into bowls and serve warm with crusty bread or over rice.

Notes

  • Fish options: Cod, tilapia, haddock, or pollock all work beautifully. Choose low-mercury fish if you’re cooking often.
  • Veggie swaps: Don’t stress if you’re missing something. Zucchini, green beans, or cauliflower work great too.
  • Lower-carb tip: Skip the potato or swap it with turnip or cauliflower to keep carbs even lower.
  • Storage: Keeps well in the fridge for up to 2 days. Reheat gently on the stove or in the microwave. Avoid boiling so the fish stays tender.
