Crockpot Cauliflower “Mac” & Cheese with Chicken

Ingredients
  

  • 1 medium Cauliflower head Cut into small florets
  • 1 lb Chicken breast or thigh Diced into bite-sized pieces
  • 1 cup Heavy cream
  • ¾ cup Chicken broth Low sodium preferred
  • cups Sharp cheddar cheese Freshly shredded
  • ½ cup Mozzarella cheese For melt and stretch
  • ¼ cup Parmesan cheese Grated
  • 2 oz Cream cheese Softened
  • ½ tsp Garlic powder
  • ½ tsp Onion powder
  • ¼ tsp Smoked paprika Optional, for flavor
  • Salt and pepper To taste

Equipment

  • 1 Slow cooker (Crockpot) 4–6 quart size works best
  • 1 Chef’s Knife For cutting cauliflower and chicken evenly
  • 1 Cutting board Use a sturdy surface for prepping vegetables and meat
  • 1 Mixing Bowl To mix cheese sauce before adding to the slow cooker
  • 1 Wooden Spoon or Silicone Spatula For stirring and serving

Method
 

  1. Lightly grease the slow cooker with oil or butter to prevent sticking.
  2. Place cauliflower florets and diced chicken evenly in the crockpot.
  3. In a saucepan over low heat, melt the cream cheese with heavy cream and chicken broth, stirring until smooth.
  4. Gradually whisk in shredded cheddar, mozzarella, and Parmesan until melted and creamy.
  5. Stir in garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until combined.
  6. Pour the cheese sauce over the cauliflower and chicken. Gently stir to coat everything evenly.
  7. Cover and cook on LOW for 2½–3 hours, stirring once halfway through.
  8. Check for tenderness: cauliflower should be soft but not mushy.
  9. If the sauce seems thin, remove the lid for the last 30 minutes to allow steam to escape.
  10. Let rest for 10 minutes before serving to help the sauce thicken naturally.
  11. Optional: sprinkle with extra cheese or bacon bits before serving.

Recipe Notes

  • Cheese matters: Always shred your cheese from a block. Pre-shredded cheese has anti-caking agents that stop it from melting smoothly.
  • Avoid mushy cauliflower: Cut florets evenly and cook on LOW, not high. High heat breaks down the cauliflower too fast.
  • Make-ahead tip: The cheese sauce can be made a day in advance. Store it in the fridge and pour it over the cauliflower and chicken when ready to cook.
  • To thicken the sauce: Crack the lid open for the last 30 minutes of cooking, or stir in a tablespoon of cream cheese right before serving.
  • Leftovers: Keep refrigerated for up to 4 days. Add a splash of cream when reheating to bring the sauce back to life.
  • Optional add-ins: Crumbled bacon, chopped scallions, or a small spoon of Dijon mustard can brighten and deepen the flavor.
  • Serving idea: Pair it with a light salad or roasted broccoli to balance the richness.
