- Step 1: Lightly grease the inside of your slow cooker with olive oil or cooking spray. This helps prevent the eggs from sticking.
- Step 2: In a large bowl, whisk the eggs, milk, salt, and pepper until smooth and slightly frothy.
- Step 3: Stir in the chopped vegetables, cheese, and cooked sausage or other protein if using. Mix gently to combine.
- Step 4: Pour the mixture evenly into the greased slow cooker. Use a spoon to spread out the vegetables if needed.
- Step 5: Cover the lid and cook on low for 2½ to 3 hours, or until the center is set and the edges pull away slightly from the sides.
- Step 6: Turn off the heat and let the frittata rest for about 10 minutes before slicing. This helps it firm up for easier serving.
- Step 7: Slice into portions and serve warm. Top with fresh herbs or a sprinkle of extra cheese if you like.
Notes
- The frittata will keep well in the refrigerator for up to 4 days. Store slices in an airtight container for best texture.
- To reheat, warm in the microwave for 30–45 seconds or in a skillet over low heat with a touch of olive oil until heated through.
- You can also freeze slices for up to 2 months. Wrap each piece in parchment paper, then store in a freezer-safe bag.
- For a dairy-free version, use unsweetened almond milk and plant-based cheese, or skip the cheese entirely.
- If you like a richer flavor, stir in a spoonful of cottage cheese or Greek yogurt before cooking.
- The slow cooker size matters. A 4 to 6-quart cooker gives the best texture. Smaller cookers can make the frittata thicker, so add 15 to 20 minutes to the cook time.
- Try different combinations: spinach and feta, mushrooms and Swiss, or ham and cheddar. This recipe is easy to adapt to what you already have.
