Ingredients
  

  • 1 tbsp olive oil extra virgin, for greasing the slow cooker
  • 8 large eggs lightly whisked
  • ½ cup milk or unsweetened almond milk
  • 1 cup shredded cheese cheddar, mozzarella, or any blend you like
  • 1 cup spinach chopped
  • 1 medium bell pepper diced
  • ½ cup onion finely chopped
  • ½ cup cherry tomatoes halved
  • ½ cup cooked sausage or diced ham, optional
  • ¼ tsp salt adjust to taste
  • ¼ tsp black pepper freshly ground
  • optional pinch smoked paprika or chili flakes for extra flavor
  • optional tbsp fresh herbs parsley or basil, chopped

Equipment

  • 1 Slow Cooker or Crockpot 4 to 6-quart size works best
  • 1 Mixing Bowl for whisking eggs and combining ingredients
  • 1 Whisk to mix the eggs smoothly
  • 1 Cutting board for chopping vegetables or proteins
  • 1 Knife any sharp kitchen knife for prep
  • 1 Spatula to lift slices out gently

Method
 

  1. Step 1: Lightly grease the inside of your slow cooker with olive oil or cooking spray. This helps prevent the eggs from sticking.
  2. Step 2: In a large bowl, whisk the eggs, milk, salt, and pepper until smooth and slightly frothy.
  3. Step 3: Stir in the chopped vegetables, cheese, and cooked sausage or other protein if using. Mix gently to combine.
  4. Step 4: Pour the mixture evenly into the greased slow cooker. Use a spoon to spread out the vegetables if needed.
  5. Step 5: Cover the lid and cook on low for 2½ to 3 hours, or until the center is set and the edges pull away slightly from the sides.
  6. Step 6: Turn off the heat and let the frittata rest for about 10 minutes before slicing. This helps it firm up for easier serving.
  7. Step 7: Slice into portions and serve warm. Top with fresh herbs or a sprinkle of extra cheese if you like.

Notes

  • The frittata will keep well in the refrigerator for up to 4 days. Store slices in an airtight container for best texture.
  • To reheat, warm in the microwave for 30–45 seconds or in a skillet over low heat with a touch of olive oil until heated through.
  • You can also freeze slices for up to 2 months. Wrap each piece in parchment paper, then store in a freezer-safe bag.
  • For a dairy-free version, use unsweetened almond milk and plant-based cheese, or skip the cheese entirely.
  • If you like a richer flavor, stir in a spoonful of cottage cheese or Greek yogurt before cooking.
  • The slow cooker size matters. A 4 to 6-quart cooker gives the best texture. Smaller cookers can make the frittata thicker, so add 15 to 20 minutes to the cook time.
  • Try different combinations: spinach and feta, mushrooms and Swiss, or ham and cheddar. This recipe is easy to adapt to what you already have.
