Ingredients
  

  • 2 cups cooked chicken breast sliced or shredded
  • 1 cup fresh kale stems removed
  • 1 small apple thinly sliced
  • 4 whole grain tortillas high fiber preferred
  • 1/4 cup plain Greek yogurt for dressing
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice fresh
  • 1 tbsp olive oil for kale
  • 1/4 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 1/4 cup walnuts (optional) chopped
  • 2 tbsp red onion (optional) thinly sliced
  • 1/4 cup shredded carrots (optional)

Equipment

  • 1 Cutting board For slicing apple and chicken
  • 1 Sharp knife Thin apple slices work best
  • 1 Mixing Bowl For kale and dressing
  • 1 Spoon To mix dressing

Method
 

  1. Place the kale in a mixing bowl. Add olive oil and a small pinch of salt. Massage with your hands for about 1 minute until softened and slightly darkened.
  2. In a small bowl, stir together Greek yogurt, Dijon mustard, lemon juice, and black pepper until smooth. Adjust seasoning if needed.
  3. Lay one tortilla flat on a clean surface. Spread a thin layer of the yogurt dressing across the center, leaving space around the edges.
  4. Add a layer of massaged kale, followed by sliced chicken and a few thin apple slices. Sprinkle with optional walnuts, red onion, or shredded carrots if using.
  5. Fold the sides of the tortilla inward, then roll tightly from the bottom up to form a wrap.
  6. Slice in half if desired and serve immediately, or wrap tightly in parchment paper or foil for storage.

Notes

  • Slice the apple thin to keep sweetness balanced and evenly distributed.
  • Massage the kale before assembling to improve texture and reduce bitterness.
  • Use a high-fiber or whole grain tortilla for better structure and added fiber.
  • Keep dressing light to prevent soggy wraps during storage.
