Ingredients
  

  • 2 slices Multigrain bread Toasted if desired
  • 1/4 avocado Ripe avocado Lightly mashed or sliced
  • 3 ounces Cooked chicken breast Sliced thin
  • 2 slices Tomato Ripe, thick slices preferred
  • pinch Salt & pepper (optional) Season to taste

Equipment

  • 1 Cutting board or slicing tomato, avocado, and assembling the sandwich.
  • 1 Sharp knife Essential for clean tomato slices and cutting the sandwich in half.
  • 1 Spoon or small spatula For spreading the mashed avocado onto the bread.
  • 1 Toaster (optional) If you prefer toasted bread for extra structure.

Method
 

  1. Toast the bread (optional).

    Toast the multigrain bread lightly for extra structure.
  2. Prepare the avocado.

    Mash or slice the ¼ avocado and spread it evenly on one slice of bread.
  3. Add the chicken.

    Layer the sliced cooked chicken breast over the avocado.
  4. Add the tomato.

    Place the two tomato slices on top of the chicken.
  5. Season.

    Sprinkle with a pinch of salt and pepper, if desired.
  6. Close and slice.

    Top with the second slice of bread, press gently, and cut in half.

Notes

  • Use ripe but firm avocado: Very soft avocado works, but a firmer one spreads more evenly and holds the sandwich together better.
  • Swap chicken as needed: Leftover rotisserie chicken, grilled chicken, or poached chicken all work well. Thin slices give the best bite.
  • Prevent soggy bread: If packing this sandwich for later, toast the bread and place the chicken between the avocado and tomato to act as a moisture barrier.
  • Customize the flavor: Add basil, cilantro, lemon juice, or everything bagel seasoning for an easy upgrade.
  • Chickpea option: For a vegetarian version, replace chicken with ¼ cup lightly mashed chickpeas seasoned with salt and pepper.
